Zucchini, Corn, and Tomatoes

2 zucchini, sliced
3 - 4 cups frozen corn
1 red bell pepper, chopped finely (optional)
2 ripe tomatoes, chopped
Oil or butter
Juice of 1/2 lemon
Salt and black pepper
Italian seasonings (herbs)
Chopped parsley (optional)

Sauté the zucchini in oil, and let it brown a bit. Add the corn and tomatoes, and red bell pepper if using. Sauté a bit, and then add the lemon juice and seasonings.
