Banana Bread

Banana Bread


(got bananas that are getting pretty scary? Make banana bread!)

4-5 very ripe bananas
4 eggs (can use egg replacer, if you have it and want to)
1 cup butter or margarine, melted
1 3 - 2 cups sugar
1 tablespoon vanilla extract
3 1 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt

Preheat oven to 300 degrees. Grease 2 – 9x5” loaf pans. In a large bowl, mash bananas and stir in the eggs until well blended. Add margarine and sugar and mix.
In a separate bowl (if you so desire), mix flour, baking soda, and salt; blend into batter. Add walnuts, if desired. Divide mixture between the prepared pans.
Bake for 1 hour 15 minutes or until a toothpick inserted into center of the loaf comes out clean.

 

If you want, you can make one loaf and 6 muffins at the same time, instead of 2 loaves. If you decide to make banana bread this way, be sure to take the muffins out after 45 minutes – 1 hour; they are ready when toothpick comes out clean.
