corn fritters

Corn Fritters with Tomato Jam

2 cups frozen corn, thawed (mix in some roasted corn for a smoky flavor)
1 cup flour
1 cup water, milk, or soymilk
1 tsp baking powder
3 Tbs oil
1 egg or egg replacer
1 tsp sugar
1 tsp salt
1 tsp paprika
1 tsp red pepper
3-5 dashes of Tobasco

Make batter by mixing together all ingredients, adding the corn last. Lightly grease a skillet and fry fritters just like pancakes, over medium heat. Makes 6 fritters. Serve with tomato jam.

 

Tomato Jam

1 cup chopped tomatoes
1 tsp salt
2 Tbs red wine vinegar
1 Tbs sugar
pinch of red pepper or dash of tobasco

Simmer together for 10 min over medium heat. Serve warm or cold.
