
Barszcz
Traditional Polish soup served with a lot of pepper (salt, pepper, and vinegar can be adjusted to taste)
2 large or 3 small red beets, scrubbed well
2-3 quarts water
1-1/3 cup lemon juice (appx. 4 small lemons) or vinegar
1-1 tablespoon pepper
Salt, to taste
Boil the beets in water for 30-45 minutes. When the beets are soft, you can cut the skin off easily. After skinned, cut the beets into bite sized pieces; then put the beets back into the water (that’s why its important to scrub them well), add salt and pepper and cook 20 minutes more. Turn off heat, add lemon juice or vinegar.
