Polish Rice Salad
4 cups cooked white rice, cooled
1 can northern beans, drained
1 can peas, drained
1 cup diced celery
1 cup diced yellow or orange bell pepper
2 Tbs capers
1 cup mayonaise or veganaise
3 Tbs honey mustard (or 2 Tbs regular mustard and 1 tbs honey)
1 Tbs green Tabasco (optional—not an authentic Polish ingredient)
1 Tbs lemon juice
2 Tbs fresh parsley
salt and pepper to taste
Combine all ingredients together in a large bowl and serve.
