Pasta with Zucchini and Fresh Tomatoes

Pasta of choice
1 tablespoon olive oil
2 tablespoons water
2 small zucchini, quartered and sliced
1 cup mushrooms, sliced
Sea salt
Pinch of oregano
2 medium tomatoes cubed
1 teaspoon dried basil
Salt and black pepper

Boil pasta according to directions. While pasta cooks, prepare sauce by placing oil, zucchini, mushrooms, oregano, and pinch of sea salt, in a skillet over medium heat. Sauté about 3 minutes stirring often and adding water when necessary to prevent scorching.
When the zucchini is light green remove from heat and set aside.
Place drained pasta back in pasta pot and add zucchini, mushroom mixture, chopped tomatoes basil, salt and pepper to taste. Toss well.

Serve with: whole grain bread and a salad.
