
Calzones
1 cup marinara or crushed tomato
1 cup frozen spinach, thawed and squeezed out
1 cup diced bell pepper
8 oz crimini, sliced
1 cup cheese
1 lb pizza dough
Saute mushrooms and peppers in 1 Tbs olive oil over medium high heat until the mushrooms are cooked through. Divide the pizza dough into 4 balls and roll each one out into a flat disk approximately 6 inches in diameter. Fill each calzone with 1 of the mushrooms and peppers, frozen spinach, tomato sauce and cheese. Brush a little water around the edges of the dough and fold dough over and seal well. Bake in on a cookie sheet at 400 degrees for 10-15 minutes or until golden brown on top.
