Celery and Portabello Salad

2 cups thinly sliced celery
2 cup thinly sliced portabello mushrooms
2 Tbs coarsley chopped fresh parsley
juice of 1 lemon
olive oil
salt and pepper to taste

In a shallow bowl or serving dish toss together celery, mushrooms and fresh parsley. Drizzle with a generous amount of olive oil and lemon juice and add salt and pepper. Serve immediately.
