
Creamy Alfredo Pasta with Veggies
1 16 oz pkg of pasta
2 Tbs vegetable oil
1 8 oz pkg of cream cheese, cut into cubes
1 medium zucchini, diced
1 medium yellow squash, diced
1 bell pepper, diced
1 12 oz mushrooms, sliced
1 cup milk
1 Tbs Italian seasoning
salt and red pepper flakes to taste
grated Parmesan cheese to garnish (optional)
Prepare pasta according to package directions and drain. In a very large skillet, fry veggies in oil for 5-7 minutes, until soft. Reduce heat to medium low and add cream cheese, milk and seasonings. Stir together for a few minutes until creamy sauce forms. Add pasta and mix to combine. If the sauce becomes too thick, more milk may be added. Serve sprinkled with Parmesan cheese. Serves 4-6. |
