
Italian Fried Rice
1/2 cup chopped white cabbage
1 bell pepper any color, diced
1 medium zucchini, diced
3 roasted yellow or red bell peppers (from a jar), diced
8 oz of frozen spinach, thawed and squeezed out to remove excess water
2 cups cooked rice (basmati is really good for this)
3 Tbs olive oil
juice of 1 lemon
salt and pepper to taste
1 tsp dried basil or oregano
In a large skillet, saute the cabbage, bell pepper and zucchini in oil over medium high heat for a few minutes. Add remaining ingredients and stir to combine. Heat through and serve.
