Pasta with Hearty Tomato Sauce
1 red bell pepper diced
1/2 cup white cabbage, diced
1/2 cup zucchini, diced
8 oz button mushrooms, sliced
1 can (28 oz) crushed tomatoes (fire roasted or with basil)
1 can cannellini beans (rinsed and drained)
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 cup grated parmesan (optional)
Salt and pepper to taste
In a sauce pan, heat 1 Tbs olive oil and fry bell pepper, cabbage, zucchini and mushrooms over medium high heat for a few minutes, until veggies soften and brown a little. Add remaining ingredients (except cheese if using) and simmer together for 20 minutes. Stir in cheese and serve with pasta.
