
Basil Pesto (vegan)
2 cups fresh basil
1 cup olive oil
1 cup pine nuts
2 tsp baslamic vinegar
salt and pepper to taste
Add all ingredients to a food processor or blender and belnd until a smooth paste forms.
Makes one scant cup of pesto. Serve mixed with warm pasta.
Parsley Pesto
2 cups fresh parsley
1 cup olive oil
1 cup crumpled feta cheese
1 tsp lemon juice
salt and peper to taste
Add all ingredients to a food processor or blender and belnd until a smooth paste forms.
