
Tomato and Basil Salad
Several ripe tomatoes sliced or quartered (heirloom tomatoes are really good for this recipe)
thinly sliced fresh basil
olive oil
salt and pepper
sliced mozzarella cheese (optional)
Arrange tomato slices, layered with cheese slices on a platter. Drizzle with a generous amount of olive oil, salt and pepper. Top with a large handful of basil and serve.
